Dylan McDonnell, a homebrewer, curated beer from 3,000-year-old yeast, using a recipe from a 3,500-year-old Egyptian papyrus. The curiosity popped up during COVID-19 when McDonnell saw someone baking sourdough with 4,500-year-old yeast. He immediately wondered if the same could be done with beer and decided to experiment. McDonnell works as a nonprofit operations manager and has a master’s degree in Middle Eastern studies from Millcreek, Utah.
