IDAHO FALLS — Rose Marie’s Gluten Free, a local specialty food truck, has been cooking up gourmet hamburgers, chicken strips, chicken parmesan sandwiches, chicken cordon bleu, chili cheese nachos, mozzarella sticks, onion rings, funnel cakes, and more for two and a half years in Idaho Falls. The food truck’s owner and founder, Rose Marie Longacre, said she and her daughter have been gluten-free for more than a decade, but the area offered limited options for people with gluten- or dairy-free dietary restrictions. “We love fried food, and you cannot get that when you’re gluten-free,” she said. …
